Like the Spike Lee film of the same name, this is an intense day lasting 8 hours, from 9 a.m. to 1 p.m. and from 2 to 6 p.m. The subject is the profession of Barista, and involves understanding the word and the ethics, the history and the areas concerned in this wholly-Italian profession. At the base of this is the study of the 6 “Ms”: Miscela/Monorigine (Blend/Single-origin), Macinatura (Grinding), Mano (Hand), Machine, Maintenance and Marketing. We experience at first hand the Pascucci Company, its characters and its history, the production of jute sacks right down to modern packaging, the art of roasting, the workshop, the history and evolution of the espresso machine, methods of extraction, market performance and, of course, lots of practice on espresso machines, to find the right formulas for each blend and make perfect espressos and cappuccinos. We finish by learning about the maintenance of the machines. It’s a day of cultural exchanges, where we try to create Baristas with a capital “B”!
The course costs 80 euro (VAT excluded) for all customers. A certificate is issued at the end of the course.
Starting with the techniques invented by Piero Merlo, one of the early “caffettaros”, and right down to its refining by American and Scandinavian masters, the Cappuccino is, along with the espresso, the calling-card of our cafés. Today, more than ever, we need to present it in a new guise if we want to stand out from the rest.
With a duration of 7 hours, from 9 a.m. to 1 p.m. and from 2 to 5 p.m., and aimed at Baristas with experience who have already taken the first course, the day’s activities enable you to perfect the techniques of processing dairy cream, the techniques of “Latte Art Lattiera”, like the Leaf (or Rosette), the Heart and the Tulip; then there’s “Latte Art Sketch”, for those who want to give rein to their imaginations in the art of creating designs on the cappuccino with a wand, and finally “Latte Art Topping’ with various sauces and “Latte Art’ with cocoa base.
The course costs 120 Euro + vat and is open to all. A certificate is issued at the end of the course.
